In a separate small bowl, mix the cornstarch and 1 tablespoon water until no lumps. For the frosting: Put the mascarpone, cream and confectioners’ sugar in a stand mixer with the paddle attachment and beat on medium speed until thick, 4 to 5 minutes. Fill the cupcakes with the peach filling and then frost with the mascarpone frosting.Add the cornstarch mixture to the pan and keep on medium-low heat for about 1 minute. I would rather go into the store, stand in line, experience it in a whole… Do you think it’s a good idea to install something like this?You are supposed to be able to come into your local Cupcakery and become a regular and get to know each other as a family.To walk into a Cupcakery is an experience in itself from the smell of the amazing baked goods being baked to the color scheme and design of the cute little shops.And then I can’t even describe what an amazing opportunity it was to be able to have our cupcakes on the Red Carpet at the 137th Kentucky Derby!!To meet people like Guy Fieri, Bobby Flay, Nick Lachey, Vanessa Minnillo, and Salt N Pepa is indescribable!
